Chicken SandwichWhat do you need?
1. Whole wheat bread (I like to use sandwich thins to cut down on carbs) 2. Hummus 3. Thin sliced chicken breast 4. Onion 5. Peppers 6. Avocado 7. Cheese (of your liking) 8. Anything else you like to put on your sandwich! What to do? 1. Put onions and peppers in a pan with some extra virgin olive oil on medium heat for about 2 minutes 2. Add chicken to pan and let heat up for another 2 minutes 3. Put hummus and cheese on bread 4. Add ingredients to sandwich and put in toaster oven for 3 minutes or until toasted to your liking. |
Salad in a JarThis calls for no particular recipe... but more so a specific order! Use your favorite salad ingredients for an on-the-go healthy lunch. Make sure you put the dressing and more "wet" ingredients (ex. beans, beets, tomatoes) on the bottom and top it off with spinach, kale or mixed greens. This will prevent your salad from getting soggy.

3. Dried cranberries
4. Diced apple
5. Halved grapes
6. Plain greek yogurt
7. Sliced almonds
8. Lemon juice
9. Garlic powder
10. Salt and pepper

Instructions:
1. Combine all ingredients in a bowl and mix well. I have not put any amounts on how much of what to add so that you may customize the recipe to your liking.

Sweet Potato and Black Bean Chili4 Medium sized sweet potatoes
1 White diced onion 4 Minced garlic cloves 1 can diced tomatoes 3 cups Beef Broth (Substitute Vegetable to make it vegetarian!) 2 lbs ground turkey 3 tbs Chili powder 1 tbs Cayenne pepper Salt and Pepper to your desire 1 can black beans Directions 1. Cook turkey and set aside 2. Saute onions and diced sweet potatoes until onions are transparent and sweet potatoes are soft 3. Add in black beans, tomatoes, garlic and turkey 4. Saute for 5 minutes 5. Add seasonings and broth 6. Let simmer for 90 minutes 7. Enjoy! |
