What you'll need: 1. A crock pot 2. 4 Chicken Breasts (thawed or frozen) 3. Jar of your favorite salsa 4. Can of corn 5. Can of black beans 6. Plain Greek yogurt Directions: 1. Put everything in the crock pot and cook on low for 7-8 hours 2. When finished, shred the chicken and let it sit for another 30 minutes 3. Serve it with a dollop of plain Greek yogurt as a sour cream substitute |
Paleo Egg RollsWhat you'll need:
1. Ground turkey 2. Coleslaw packet 3. Pepers 4. White onions 5. Green onions 6. Ground mustard 7. Soy sause 8. Egg roll wrappers (can use wonton wrappers as well) Directions: 1. Brown ground turkey in large pan 2. Add the desired amount of items 2-5 to the pan and sauté for 5-8 minutes 3. Add ground mustard and soy sauce and sauté for another minute 4. Set aside to cool for 15-20 minutes 5. Add a spoonful of mixture to egg rolls and moisten edges in order to allow egg roll wrapper to stick closed 6. Spray egg rolls with olive oil 7. Bake egg rolls in oven at 425 degrees for 10 minutes (flipping half way through) |
Broccoli Chicken CasseroleWhat you'll need:
1. 1 pound of cooked chicken 2. 1 cup chicken broth 3. 1-1/2 cup plain greek yogurt 4. 1 cup mozzerella 5. 2 cups of quinoa and brown rice mix (I use 1 cup of each, but it is up to you how much of each you would like to use) 6. 2 cups raw broccoli (raw) 7. 1/3 cup red onion 8. 1/4 cup green onion 9. 1/2 cup whole wheat breadcrumbs 10. 1 tbsp italian seasoning 11. Salt and pepper to taste Directions: 1. Heat oven to 375 degrees while you chop cooked chicken into chunks 2. In bowl, mix together all ingredients except for whole wheat breadcrumbs (#9) 3. French Onion Soup
In the winter time I find myself using my crockpot ALL the time! With the cold weather around the corner here is another great soup recipe!
What you'll need:
1. 3 large onions
2. 10 cups of reduced sodium beef broth
3. Garlic (to your liking)
4. 1 bay leaf
5. 1 can beer (I used Old Chub from a brewery called Oskar Blues, but feel free to use other dark beers)
6. Whole wheat french bread
7. Swiss cheese slices
Instructions:
1. Brown onions in pan with olive oil, garlic, and salt and pepper
2. Add cooked onions, beef broth, bay leaf, and beer to crockpot
3. Cook on high for at least 5 hours
4. Toast bread, add soup to bowl, top with toasted bread, add cheese slice on top of bread, and broil on high for about 5 minutes.

2. Chopped red onion (1/2 cup)
3. 2 cloves of garlic finely chopped
4. 14 ounce can artichoke hearts
5. Chopped tomato
6. Feta cheese (1/2 cup)
7. Green olives
8. 2 chicken breasts
9. Oregano
10. Lemon juice
Instrictions:
1. Boil pasta
2. Saute onions and garlic for 2 minutes
3. Add chicken and cook until chicken is no longer pink
4. Add the rest of the ingredients (including the cooked pasta) to pan and cook for 2 minutes or until everything is warm
